a good shop for engines does all that.
vacuum
compression.
fuel pressure. at spec keyon and at idle. per FSM book. factory service manual.
timing,. cam and spark
and lash set.
find any leaks, and hoses ready to fail or belts near failure full of cracks.
best is not drive a car that overheats, more damage is sure increase.

In the end it was nothing wrong with the new head but a real tiny leak of coolant dripping from a crack in engine block above oil filter and oil pressure bulb, very near below is a core plug (freeze plug?) but it was not leaking from it. So far I stopped this leak/crack by using a USA product that I poured into the radiator (have only used 1/4 of the bottle). I don't know how long this fix will last despite in the bottle it says permanent fix. I don't know the forum rules so I'm not writing the name of this product.

no rules names of any product are ok.
yes bottles of magic stuff like 100 year old products called Bars leaks. can work.
and do.
it is not permanent. , and can clog up a good radiator tubes/
no crack simply stays static, it grows all cracks grow. head, block or in gaskets.
the engine expands when hot, and then contracts, cold this action causes any crack to get worse.
a head gasket can leak or is from warped head or warped top deck of block.
or block is cracked. (or as you said freeze plugs leaking)
idle the car for 1/2 hour after fully hot. see the leak with eyes, under natural 12-14PSI pressure, you will see the leak. 99% sure.
